Sonia Rita Erin Jackson Beasley: September 4, 1941 – December 21, 2023

Sonia Rita Erin Jackson Beasley, 82 of Greensboro, NC & Dallas, TX., born September 4, 1941, passed away peacefully on December 21, 2023 in Greensboro, NC. Dearly beloved daughter of Sheila and Kingsley Jackson, brother Peter Jackson and sister Sandra Rahim.

Sonia was one of a kind, in every sense of the word! At an early age, she left her beloved home and family. Sonia was a world traveler, born and raised in Sri Lanka, she lived in London, England – Toronto, Canada - Manhattan, NY - Washington, D.C where she worked for the Maldivian Consulate, (fun fact- she typed a paper for the Consulate that is now in a capsule on the Moon). She met her husband, while in Washington, D. C. He was sent to work in the Caribbean for several years where they had two children. They later moved to London and then to Boulder Creek, CA where Sonia wrote the first Spirulina Cookbook.

God sent Sonia here with so many gifts, her love of God, family, and cooking, were her greatest gifts; the three she took most pride in sharing. Cooking was her way of expressing her love, because she believed that eating well was a way of nourishing both our bodies and spirits! Sonia was an eclectic chef with talents combining her eastern cuisine with the health food movement. Her dishes were very delectable and delicious. She catered and worked for several corporations as their “Head Chef” until she retired and moved to Greensboro, NC to be closer to her daughter.

Sonia cooked from the heart, and was always teaching and sharing her trade secrets, to a perfect meal, with her children, grandchildren and loved ones. On December 21, 2023, God called Sonia out of her earthly kitchen and brought her to HIS, heavenly kitchen.

Left to reminisce, around her dining room table, are her sister Sandra Rahim; her daughter Ayesha Beasley Oglesby and husband Ike Oglesby; her son Victor Ashoka Beasley her granddaughters Jasmyn Beasley, Victoria Beasley, and Ayanna Beasley, her grandsons Jacary McClinton, Isaiah Oglesby, Aaron Oglesby, her great grand daughter Kyomi Boclair, and a host of worldwide relatives and friends.

Sonia touched many lives with her interesting travel stories, health info and wonderful food. She will be remembered for her warm smile, quick wit, and her fervor for life and all its opportunity. She will be greatly missed. We love you, Sonia.
